Sweet Potato Crunch

Sweet Potato Crunch

4 giant sweet potatoes 
2 eggs
1 cup sugar
1 stick of butter, softened
1 tbsp pure vanilla extract
1 shot of Jack Daniels Tennessee whiskey (and perhaps another shot for the cook)  

Cook and mash your sweet potatoes.  You can also use cooked carrots in place of some of the potatoes.  Don't used canned sweet potatoes though.....do it up right.....quality ingredients make all the difference (no vanilla "flavor")!!  Combine your mashed sweet potatoes, eggs, sugar, butter, vanilla, and jack until mixed.  Spread in casserole dish.  Top with this: 

Crunchy Topping
1 cup chopped pecans (optional)
1 cup brown sugar
1/3 cup flour
1/2 stick of butter cut into pieces

Combine all ingredients except butter.  Sprinkle over your sweet potatoes.  Cut up chunks of butter and place randomly over the top of your casserole.  Bake at 350 degrees until topping crusts.  Devour.

just as a side note, he made this and it was so so so so good. I will never eat a regular sweet potato again!
